Costa Rican Recipies From Carolyn to You!
"TRES LECHES" (Three-Milk Cake)
Prepare a white or yellow cake mix in a 9 x 13 pan, or make a basic one "from scratch" using the following recipe:
Cream 1 stick butter or margarine (1/2 cup) together with 1 cup sugar until fluffy. Add 4 eggs, one at at time and 1 tsp. vanilla, beating well. Gradually add 1 1/2 cups flour sifted together with 1 1/2 tsp. baking powder.
Bake in greased and floured pan at 350 degrees for 30 minutes, untill done. Let cool, then pierce all over with a fork.
Mix together 1 can sweetened condensed milk, 1 can evaporated milk and two cups regular milk, and slowly pour over cake. (The cake will soak up the 3 milks.) Top with whipping cream (or CoolWhip) and, if desired, decorate with cherries and/or stripes of chocolate syrup, or sprinkle with cinnamon sugar and/or cocount.
Store covered, in refrigerator.
"SOPA NEGRA" (Black Bean Soup)
In small amount of oil in heavy saucepan, soften:
1/2 cup onion, chopped
4 cloves garlic, minced
1/4 cup chopped fresh coriander (cilantro) leaves.
Add: 1/4 cup Worchestershire sauce and 2 cups water.
Peel, slice in 1/2 inch slices and add 1 green plantain (cooking banana).
Add about 4 cups of cooked black beans (2 or 3 cans) and cook about 20 minutes until plantain is tender (it will still be firm, but can be pierced with a fork).
In the meantime, hard boil 2 or 3 eggs, peel and slice in rounds.
Taste soup, and add salt, pepper and/or hot sauce to your taste.
Place soup in wide-mouthed serving bowls and top with egg slices. Serve with tortilla chips for a delicious, nutricious yet light meal. (This should serve 3 or 4 people.)
(Note: If plantains are not available, a couple of potatoes peeled and cut in chunks could be substituted.)
